The Salad:
- 2 large heads Romaine hearts, washed, dried, and chopped
- 1/2 cup Parmesan cheese, shaved or grated
The Croutons:
- 3 cups crusty bread (sourdough or baguette), cut into 1-inch cubes
- 2 tbsp olive oil
- 1/4 tsp garlic powder
- Pinch of salt
The Chicken:
- 2 large boneless, skinless chicken breasts (approx 1 lb)
- 1 tbsp olive oil
- 1 tsp dried oregano
- 1/2 tsp garlic powder
- Salt and Black Pepper
The Creamy Caesar Dressing:
- 1/2 cup mayonnaise (high quality)
- 1/2 cup plain Greek yogurt (or sour cream)
- 2 cloves garlic, minced finely
- 2 tbsp fresh lemon juice
- 1 tsp Dijon mustard
- 1 tsp Worcestershire sauce
- 1/2 tsp anchovy paste (optional, but recommended!)
- 1/4 cup grated Parmesan cheese
Instructions
- Make Croutons: Preheat oven to 375°F (190°C). On a baking sheet, toss the bread cubes with olive oil, garlic powder, and salt. Bake for 10-12 minutes until golden brown and crunchy. Set aside to cool.
- Prep Chicken: Slice the chicken breasts in half horizontally to create 4 thin cutlets. Rub them with olive oil, oregano, garlic powder, salt, and pepper.
- Sear Chicken: Heat a large skillet over medium-high heat. Add the chicken cutlets and cook for 4-5 minutes per side until golden and cooked through (internal temp 165°F). Remove from pan and let rest for 5 minutes before slicing.
- Make Dressing: While chicken rests, whisk together the mayonnaise, Greek yogurt, minced garlic, lemon juice, Dijon, Worcestershire, anchovy paste, and grated Parmesan in a small bowl or jar until smooth.
- Assemble: In a very large bowl, combine the chopped Romaine lettuce and half of the dressing. Toss well to coat every leaf. Top with the sliced warm chicken, croutons, and shaved Parmesan. Drizzle with remaining dressing if desired. Serve immediately!
Notes
- Anchovy Paste: If you don’t have paste, you can mince 1-2 anchovy fillets. If you want a vegetarian version, swap the anchovy paste for 1 tbsp of minced capers.
- Meal Prep: Store the dressing, chicken, and lettuce in separate containers. Keep croutons in a ziplock bag at room temperature to keep them crisp.
