- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
- Zest of 2 medium lemons
- 1/4 cup (60 ml) freshly squeezed lemon juice
- 2 teaspoons freshly cracked black pepper
- 3 garlic cloves, minced
- 1/4 cup (60 ml) extra virgin olive oil
- 1 teaspoon salt
- 2 tablespoons fresh parsley, chopped (optional)
- Wooden or metal skewers (if wooden, soak in water for 30 minutes before grilling)
Instructions
- Combine lemon zest, lemon juice, black pepper, minced garlic, extra virgin olive oil, and salt in a large bowl
- Whisk the marinade ingredients together thoroughly until well combined
- Add the 1-inch chicken cubes to the bowl with the marinade
- Toss the chicken to ensure every piece is fully coated
- Cover the bowl and refrigerate for at least 30 minutes, or up to 4 hours, for optimal flavor
- If using wooden skewers, remember to soak them in water for at least 30 minutes
- Thread the marinated chicken pieces onto the skewers, leaving small gaps between each piece for even cooking
- Arrange the assembled skewers on a clean plate or baking sheet
- Preheat your grill to medium-high heat (approximately 400°F / 200°C)
- Lightly oil the grill grates to prevent sticking
- Grill the skewers for 8–10 minutes per side, or until fully cooked and slightly charred
- Remove skewers from the grill and let rest for 5 minutes before serving
Notes
- For extra flavor, add other herbs like rosemary or thyme to the marinade.
- Replace olive oil with avocado oil if preferred.
- Serve with rice, couscous, or a mixed green salad for a complete meal.
- Store leftover skewers in an airtight container in the refrigerator for up to 2 days.
