- 2 large boneless, skinless chicken breasts
- 2 tbsp fresh cilantro, chopped
- 2 cloves garlic, minced
- 1 small jalapeño, finely diced
- Juice of 1 lime (for salsa)
- Juice and zest of 2 limes (for marinade)
- 1 large ripe mango, diced
- ¼ cup red onion, finely diced
- 2 tbsp honey
- ¼ tsp black pepper
- ½ tsp smoked paprika
- ½ tsp salt (for chicken)
- 1 tsp ground cumin
Instructions
- Pat chicken breasts dry with paper towels
- Combine juice and zest of 2 limes, 2 tbsp honey, ½ tsp salt, ¼ tsp black pepper, ½ tsp smoked paprika, 1 tsp ground cumin, and 2 tbsp olive oil in a small bowl
- Pour marinade over chicken breasts in a shallow dish and coat fully
- Cover and refrigerate for 30 minutes to 2 hours
- In a medium bowl, mix diced mango, ¼ cup red onion, 1 small jalapeño, and 2 tbsp cilantro
- Add juice of 1 lime to the mango mixture and season with salt and pepper to taste
- Preheat a skillet over medium-high heat
- Remove chicken from marinade and discard excess (discard remaining marinade)
- Cook chicken in the skillet until golden brown and fully cooked, about 6-7 minutes per side
- Serve chicken immediately with chilled mango salsa
Notes
- Marinate chicken for up to 2 hours for maximum flavor
- Chop all salsa ingredients before adding lime juice to retain mango texture
- Salsa can be prepared up to 1 hour ahead
