We cook the carrots right in the glaze until the water evaporates, leaving them tender and coated in a sticky, buttery, sweet sauce that tastes like “vegetable candy.” It’s the perfect side dish for everything from a weeknight chicken dinner to a fancy holiday roast!

  • 2 tbsp unsalted butter
  • 2 tbsp honey

  • 1/4 tsp salt
  • 1/8 tsp black pepper

  1. Prep: Peel the carrots and slice them on a diagonal bias into even coins (about 1/4-inch thick). Keeping them the same size ensures they cook evenly!
  2. Combine: In a large skillet over medium-high heat, combine the sliced carrots, butter, honey, brown sugar (if using), salt, and water.
  3. Simmer: Bring the liquid to a boil. Cover the skillet with a lid, reduce heat to medium-low, and simmer for 5-7 minutes, or until the carrots are just fork-tender.
  4. Reduce the Glaze (The Magic Step!): Remove the lid and increase the heat to medium-high. Let the liquid boil vigorously. Cook for another 3-5 minutes, tossing often.
  5. Listen for the Sizzle: Watch closely! The water will evaporate, and the sound will change from a rapid “boil” to a frying “sizzle.” This means only the butter and honey are left! Toss the carrots in this sticky glaze for 30 seconds until shiny and coated.
  6. Finish: Remove from heat. Stir in the fresh lemon juice and black pepper.

  • Cut Evenly: Slice your carrots to the same thickness so you don’t end up with some mushy and some crunchy pieces.
  • Baby Carrots Shortcut: You can absolutely use a bag of baby carrots! They are usually a bit thicker, so just simmer them (covered) for an extra 2-3 minutes in Step 3.
  • Air Fryer Method: Toss carrot slices with melted butter and honey. Air fry at 375°F for 12-15 minutes, shaking halfway through.
