Ingredients

  • 4 Boneless, skinless chicken breasts
  • 2 cloves Garlic, minced
  • 1 tbsp Fresh ginger, grated
  • 1 Lime, juice of
  • 1 small Fresh pineapple, cored and cut into 1-inch rings
  • 1/4 cup Honey
  • 1/4 cup Soy sauce
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1 tbsp Olive oil

Instructions

  1. Pat chicken breasts dry with paper towels
  2. Combine garlic, ginger, lime juice, honey, soy sauce, salt, and pepper in a bowl
  3. Place chicken in a shallow dish and pour marinade over it
  4. Refrigerate for 30 minutes to 4 hours
  5. Preheat grill to medium-high heat (400°F / 200°C)
  6. Brush grill grates with olive oil
  7. Grill chicken breasts for 6-8 minutes per side until cooked through
  8. Grill pineapple rings until caramelized (2-3 minutes per side)
  9. Brush extra marinade onto chicken and pineapple during grilling
