- 2 lbs Chicken Breasts or Thighs, cut into 1-inch cubes
- 2 Bell Peppers (any color), cut into chunks
- 1 Red Onion, cut into chunks
- 2 Zucchini, sliced into thick rounds
- Classic Marinade: 1/4 cup Olive Oil, 1/4 cup Soy Sauce, 2 tbsp Honey, 3 cloves Garlic (minced), 1 tbsp Lemon Juice, 1/2 tsp Black Pepper.
- Greek Variation: Swap Soy/Honey for 1 minced shallot, 1 tsp each of oregano/basil/thyme, and 2 extra tbsp lemon juice.
Instructions
- Marinate: Whisk marinade ingredients in a bowl. Add chicken and toss to coat. Refrigerate for 1–4 hours.
- Prep: If using wood skewers, soak them in water for 30 minutes.
- Assemble: Thread chicken and vegetables onto skewers, alternating pieces.
- Grill: Preheat grill to medium-high. Grill skewers for 10–15 minutes, turning occasionally, until chicken reaches an internal temperature of 165°F.
- Oven Option: Bake at 425°F on a wire rack for 15–20 minutes, flipping halfway through.
- Serve: Let rest for 5 minutes, then serve with rice or pita bread.
Notes
- Wooden vs. Metal Skewers: If you find your wooden skewers are still charring too much, try double-piercing the meat with two skewers side-by-side. This also prevents the chicken from spinning when you try to flip it.
- The “Acid” Rule: Do not leave the chicken in the lemon-based marinade for more than 24 hours. The acid in the lemon juice will begin to break down the proteins, which makes the chicken texture feel mushy rather than tender.
- Vegetable Prep: If you use mushrooms or cherry tomatoes, add them to the ends of the skewers. They cook faster than peppers and onions, so keeping them on the outside makes them easier to monitor.
- Leftovers: These kabobs are wonderful for meal prep. Slide the leftover chicken and veggies off the sticks and toss them into a cold pasta salad the next day for a quick lunch.
