Ingredients
For the Chicken Filling:
- 3 cups cooked chicken, shredded
- ½ cup sour cream
- ½ cup salsa, mild or medium
- 1 small can (4 oz) mild diced green chilies
- 2 ounces cream cheese, softened
- 1 cup freshly shredded Monterey Jack cheese
- 1 cup freshly shredded sharp cheddar cheese
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon smoked paprika
- ½ teaspoon dried oregano
- ½ teaspoon salt
- Cayenne pepper to taste (optional)
For Assembly:
- 12 to 14 medium flour tortillas, 7 to 8 inches
- Vegetable oil for pan-frying, or olive oil for baking and air frying
For Serving:
- Sour cream, guacamole, shredded iceberg lettuce, fresh salsa, lime wedges
Instructions
- In a large bowl, combine sour cream, salsa, softened cream cheese, green chilies, and all seasonings. Stir until smooth. Add shredded chicken and both cheeses. Mix until fully combined.
- If tortillas are not pliable, stack 6 together, cover with a damp paper towel, and microwave for 60 seconds. Repeat with remaining tortillas.
- Lay each tortilla flat. Spoon about 3 tablespoons of filling along the bottom third. Roll tightly and place seam-side down. Repeat with all tortillas.
To Pan-Fry: 4. Heat 1 cup vegetable oil in a large nonstick skillet over medium-high heat to 325°F. Add 2 to 4 flautas seam-side down. Fry for 3 to 4 minutes, turning as needed, until golden on all sides. Drain on paper towels. Keep warm in a 200°F oven while frying remaining batches.
To Bake: 4. Preheat oven to 425°F. Place flautas on a wire rack over a baking sheet. Brush generously with olive oil. Bake for 18 to 20 minutes until golden. Broil for the last 2 minutes for extra crispiness.
To Air Fry: 4. Preheat air fryer to 400°F. Brush flautas with olive oil and place seam-side down in the basket without touching. Air fry for 6 to 8 minutes, flipping halfway through.
- Serve immediately in a single layer with sour cream, guacamole, shredded lettuce, salsa, and lime wedges.
Notes
- Rotisserie chicken is the fastest shortcut for this recipe.
- Always use freshly shredded cheese. Pre-packaged cheese will not melt properly.
- Roll tightly and place seam-side down to prevent bursting during cooking.
- Never stack cooked flautas. They will steam and lose their crunch immediately.
- Make the filling up to 24 hours ahead and store covered in the refrigerator.
- Freeze cooked flautas for up to 3 months. Reheat from frozen in the air fryer at 400°F for 10 minutes.
- Corn tortillas can be substituted but will technically make taquitos. Warm them first and secure with toothpicks before cooking.
