  • Total Time: 55
  • Yield: 4 servings

Ingredients

Scale
  • 2 pounds boneless skinless chicken thighs
  • 2 tablespoons avocado oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried mustard
  • 1 cup BBQ sauce, plus more for serving

Instructions

  1. Preheat oven to 400°F (200°C). Arrange oven rack in the middle position
  2. Pat chicken thighs dry with paper towels
  3. Combine avocado oil, kosher salt, black pepper, garlic powder, onion powder, smoked paprika, and dried mustard in a bowl
  4. Add chicken thighs to bowl, toss to coat evenly
  5. Marinate for 30 minutes
  6. Place chicken in a baking dish, skin side up
  7. Bake for 25 minutes until just cooked through
  8. Spoon BBQ sauce over chicken, then increase oven to 425°F (218°C)
  9. Bake 10–15 minutes until sauce is caramelized and golden

Notes

  • Marinate at room temperature for up to 1 hour or refrigerate overnight
  • Use a thick, halal-compliant BBQ sauce to prevent weeping and ensure proper caramelization
