- 2 pounds boneless skinless chicken thighs
- 2 tablespoons avocado oil
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon dried mustard
- 1 cup BBQ sauce, plus more for serving
Instructions
- Preheat oven to 400°F (200°C). Arrange oven rack in the middle position
- Pat chicken thighs dry with paper towels
- Combine avocado oil, kosher salt, black pepper, garlic powder, onion powder, smoked paprika, and dried mustard in a bowl
- Add chicken thighs to bowl, toss to coat evenly
- Marinate for 30 minutes
- Place chicken in a baking dish, skin side up
- Bake for 25 minutes until just cooked through
- Spoon BBQ sauce over chicken, then increase oven to 425°F (218°C)
- Bake 10–15 minutes until sauce is caramelized and golden
Notes
- Marinate at room temperature for up to 1 hour or refrigerate overnight
- Use a thick, halal-compliant BBQ sauce to prevent weeping and ensure proper caramelization
- Chicken thighs can be flipped halfway for even browning
