- 1 cup cooked chicken, shredded or diced
- 1/2 cup BBQ sauce (alcohol-free)
- 2 flatbreads or naan
- 1 tbsp olive oil or halal-friendly garlic butter, for brushing
- 1/2 cup sharp cheddar cheese, grated
- 1 cup mozzarella cheese, shredded
- 1/4 cup red onion, thinly sliced
- 1 pickled jalapeño, sliced
- 2 tbsp fresh cilantro, chopped
Instructions
- Preheat oven to 400°F (200°C) with a baking sheet inside.
- Combine chicken and BBQ sauce in a bowl, stirring until fully coated.
- Remove the hot baking sheet and brush flatbreads with olive oil or butter.
- Place flatbreads on the baking sheet to crisp the base.
- Sprinkle grated cheddar over each flatbread.
- Spoon BBQ chicken mixture evenly over the cheddar.
- Top with shredded mozzarella, red onion, and jalapeño slices.
- Return to the oven and bake for 8-12 minutes.
- Until cheese is bubbly and golden, and flatbread is crispy.
- Remove and garnish with fresh cilantro.

- Ensure BBQ sauce is alcohol-free. For extra crispiness, preheat the baking sheet for 15 minutes.
- Adjust jalapeño seeds for spice level. Use leftover rotisserie or grilled chicken to save time.
