My Stress-Free Thanksgiving Game Plan (The Real Secret!)

One Week Before…

  • Finalize Your Menu: Read through all your recipes and make your full shopping list (don’t forget the fresh herbs and spices!).
  • Go Grocery Shopping: I like to do my “big shop” for all the pantry items, canned goods (like pumpkin and broth), and drinks.
  • Check Your Turkey: If your turkey is frozen, check the weight! You need to plan 1 full day of thawing in the fridge for every 4 pounds! (So, a 12-pound turkey needs to move from the freezer to the fridge on Sunday at the latest!)
  • Make & Freeze: You can bake your Easy Pecan Pie Bars and your Pumpkin Pie Cookies (un-filled shells) now and freeze them!

2-3 Days Before (Monday or Tuesday)

  • The “Big Prep” Day: This is when I put on some music and chop! I dice all my onions, carrots, and celery for the stuffing, gravy, and soup. I store them in airtight containers in the fridge.
  • Make Your Gravy Base: This is my #1 lifesaver! I make my Easy Crockpot Turkey Gravy base completely, let it cool, and store it in a jar in the fridge.

  • Make the Mashed Potatoes: Yes, you can! Make the Best Garlic Butter Mashed Potatoes completely, put them in their oven-safe dish, and cover and chill!
  • Set the Table! This is my favorite part. Get the table all set, put out the serving dishes with a little note on each one (“Stuffing,” “Potatoes,” etc.), and lay out all your serving spoons.

Thanksgiving Day!

  • Morning:
    • Get your Oven Roasted Turkey Breast prepped with that lovely herb butter and get it in the oven.
    • Take all your make-ahead side dishes out of the fridge to let them take the chill off.
  • 1-2 Hours Before Dinner:
    • Put your make-ahead casseroles (Stuffing, Green Beans, Sweet Potatoes, Mashed Potatoes) into the oven.
    • Pour your Crockpot Gravy into your slow cooker and set it to LOW to heat up.
  • 30 Minutes Before Dinner:
  • Right Before Serving:
    • Carve the turkey, put all your hot, bubbly side dishes on the table, and pour that perfectly warm gravy. You did it!

Ellie’s Final Tips for a Joyful, Calm Day

  • Tip 1: A Clean Sink is a Calm Cook! This is my little secret to staying sane! I try my best to “clean as I go.” While the turkey is roasting, I wash the bowls I used for the stuffing. While the casseroles are baking, I wipe down the counters. It’s so much nicer to sit down to dinner knowing you don’t have a giant mountain of dishes waiting for you!
  • Tip 2: Put Out a “Welcome Snack” This is such a lifesaver! Everyone is always so hungry when they arrive, and the house smells so good! I always put out a simple, no-fuss snack, like my Pumpkin Spice Chex Mix, on the coffee table. It keeps everyone happy and out of the kitchen, so no one is starving or asking, “When is it ready?!” every five minutes!
  • Tip 3: It’s About the People, Not the Perfection! This is my most important tip of all. Please, please remember this! Something will go wrong. You’ll forget to buy the cranberries. Someone will burn the rolls. (I’ve done it!) The gravy might be a little lumpy. It is all okay. I promise. The true goal of this day is not a perfect meal; it’s a happy table. It’s about gathering the people you love, sharing a meal, laughing, and feeling grateful. That’s the only thing that truly matters.
